Joe Farms raises Belted Galloway cattle which are a very lean breed. They are low in saturated fat, but well marbled, making them an excellent choice for tender, flavorful, juicy beef. Compared to other breeds, they have 46% few calories, are 69% lower in saturated fat, 57% lower in cholesterol, and 19% higher in protein, per the Belted Galloway Society. They have a long coat of fur which insulates their bodies so there is just 2% fat content in their finished beef. Our cattle are raised on grass and finished on grass to give you the highest quality beef.
Joe Farms sells quarters or halves of our beef. We should have at least a quarter to a half available in Mid-September/October 2024. Our bulls will be processed at approximately two years old. They are hung for ten days to two weeks to age the beef, further enhancing the flavor. The weight on a quarter cut will be around 75 pounds and for a half around 150 pounds. A typical quarter may include the following:
T-Bone Steaks or Filet Tenderloin Steaks (on a half you could choose both Filet and T-Bone)
New York Strip Steaks
Ribeye Steaks
Sirloin Steaks
Round Steaks or Cube Steaks
Chuck Roasts
Sirloin Tip Roast
Rump Roasts or more Ground Beef
Tri Tip
Stew Meat
Short Ribs
Brisket
Flank Steak

Ground Beef in either 1-1.5 lb. tubes or 2-2.5 lb. tubes
The heart, liver, tongue and tail are optional
